Taking care of an excellent raw material
All these years of experience and work in the area has provided us an in-depth knowledge of each of the 500 micro-plots of land that are worked on individually with a maximum respect for their essence and nature.
The nurturing of this raw material throughout its entire cycle, the exceptional qualities achieved in the vineyard and a careful intervention in the winery makes up our working philosophy.
The winery has different-sized vats made from a variety of materials, with the purpose of adapting to the different needs of each type of grape. Among the materials used are wooden tanks, concrete deposits and stainless-steel vats, and their size ranges from 1,000 to 10,000 litres.
The bodega’s philosophy of carrying out a careful intervention in the winery begins from the moment the grapes ferment to when the wine is finally made, always following natural fermentation procedures without any cold stabilisation and very smooth filtering processes, thus pampering the excellent raw material.
Once the malolactic fermentation is completed in the tanks, the wines are taken to the barrel room, where they are aged in 100% French oak. The barrel stock is renewed periodically, always trying to respect the wines’ mineral properties.
The calcareous rock present in the entire valley provides these wines great potential for ageing, and the time they are spent in the barrel is paramount in getting them to express their entire potential.
